Here is a quick snack that I enjoy.  My step sons saw me eating it once and decided to try it.  Now they eat it all the time.  I have to keep the three ingredients stocked. 

Slice an apple, spread peanut butter on each slice and then roll the slices in shelled sunflower seeds.  Healthy, easy, and yummy!

I’m off to spend time with my son.  Today is his very last “off-track” day–ever.  His school is moving to a traditional schedule next year and we will no longer have off-track time to spend together.
